Most South Africans recognise sirloin steak as being half a T-bone steak. I find this is one of those steaks that people often over cook and don't rest, just because of the size of it. I'm not advocating being too delicate, but in my opinion they should be cooked on an extremely high heat, quickly on and off to be rested. Nothing is more frustrating than them being braaied, cooked first and then sitting in the serving tray waiting for the rest of the meat to cook and basically boiling the poor little guys.
