Fillet is the most tender and sort after beef cut. It can be eaten raw, roasted, braaied, steaked or even stuffed. I personally feel if you are going to be forking out the big buck for this guy you need to spoil yourself with it. I love carpaccio and with a little drizzle of olive oil and lemon juice, some sort of peppery herb and it is really yummy. Honestly it is pretty tough to not make something delicious with it, just don't over cook it. Pretty please. If you are going to be braaiing it, try do it whole, crusted in pepper - let it rest and then slice to portions, it will be a show stopper.
It is one of those steaks that a lot of people buy because it is so easy, but to my mind because of its rarity you really do need to treat it well, even if that doesn't mean loads of effort. Seared in creamy pepper sauce would also be doing right by it.
We cut our full fillets in half, the trunk and the head, that way we can get closer to a standard weight. Both equally delicious.
