If you have those hankerings for wafting braai smoke on a lazy weekend afternoon, a T-Bone is an essential ingredient. Ours are well matured and thick cut. Being pasture reared their fat is yellow and delicious which melts into the meat and the fire. I like mine medium rare taking care of not over cooking the fillet side. Cook them from room temperature and let them rest.
There is something very primal about cooking them on an open fire, that something is beautiful. They are difficult to beat.
