Pork fillet is incredibly lean and as such is a little tricky to cook perfectly. The easiest is to cook it whole and slice it after. If ever you plan to serve it in a sauce, which you should, cook the sauce and the fillet separately and add them together at the end. It goes really well with cream based sauce, brandy ones in particular. They are always better lightly under than over-cooked.
